[SimplifyMe] Tuna Pasta---(2 Recipes)---Turkey Pies

 

TUNA PASTA                                     Makes 6 servings.

Cook 1 pound linguine pasta as label directs. Peel 1 pound zucchini, trimmed, into wide ribbons. Drain pasta. Toss with zucchini, two 5 oz cans tuna in olive oil, undrained, 1 pint cherry tomatoes, cut in half, 2 tbs capers, rinsed, chopped, and 1/4 tsp each salt and pepper, then SERVE...

TURKEY PIES                                Makes 4 servings.

Heat oven to 400°. Line a baking sheet with parchment paper. Heat 2 tbs olive oil in a skillet. Add 1 medium onion, finely chopped, and 1/4 tsp each salt and pepper, cook covered 4 min. Add 1 small russet potato, cut into 1/4" pieces, cook covered until tender, 7 min. Stir in 1 tsp curry powder, cook 1 min. remove from heat. Add 3/4 cup frozen peas, thawed, 1/4 cup golden raisins, chopped, and 1 tbs red wine vinegar, mix to combine. Fold in 1 1/2 cups shredded roasted turkey or chicken. Unroll 2 refrigerated rolled pie crusts, cut each into 4 triangles. Divide turkey mixture among pieces of dough, placing it on one side. Fold dough over filling, press edges to seal, transfer to baking sheet. Brush with 1 beaten egg, bake until golden brown, 20 min. SERVE with a salad, if desired...
