EASY BRAISED BEEF Makes 4 servings.
In a pot or Dutch oven, heat 2 tbs olive oil. Season 1 1/2 pounds cubed boneless beef stew meat with salt and pepper, then toss with 1 1/2 tbs flour, brown beef on all sides 5 min. transfer to a bowl. Add 1 1/2 pounds carrots, peeled, sliced 1" thick on the diagonal, 1 large onion, halved, thinly sliced, 2 large sprigs thyme, 2 large cloves garlic, crushed, and remaining 1 tbs olive oil to pot, season with salt and pepper.
COVER cook until slightly softened, 7 min. Increase heat, stir in 1 tbs tomato paste 2 min. Add 2 cups low sodium beef broth, bring to a boil. Add beef, press a piece of parchment paper on top. Cover cook until very tender 2 1/2 hours. Ladle stew into bowls, garnish with 1/2 cup pickled pearl onions, then SERVE...
