MELON GRANITAS Makes 4 servings. 3 pounds honeydew, cantaloupe or watermelon, rind removed, seeded, and cut into pieces 1/2 cup sugar In a saucepan, combine sugar and 1/2 cup water and bring to a boil. Reduce heat and simmer, do not stir, until sugar dissolves. Remove from heat and let cool completely. In a food processor or blender, puree cooked syrup and melon until smooth. -Strain into a metal pan, cover and freeze until firm, 3 hours. When ready to serve, remove pan from freezer and let sit at room temp 5 min. Using a fork, scrape the surface of the melon ice to create flakes, divide among glasses, then SERVE... |
