[SimplifyMe] Strawberries and (Cream)---in/ Meringue Bowl

 

PAVLOVA WITH STRAWBERRIES & CREAM           Makes 8 servings.

2 tbs powdered sugar
3/4 cup heavy cream
2 cups strawberries
1 tsp vanilla
1 tbs potato starch
1/2 cup yogurt
1 1/2 tbs strawberry jam
1 tsp white vinegar
3 large egg whites
3/4 cup sugar

Heat oven to 250°. Line a baking sheet with parchment paper. In a bowl, combine 1/4 cup sugar and potato starch. Beat egg whites in a bowl until soft peaks form. Add remaining sugar beating until incorporated. Add potato starch mixture beating until whites are stiff and glossy, beat in vanilla and vinegar.
-Spread meringue into an 8" disk 2" high on baking sheet, make a 1" deep indent in the center of the meringue, leaving a 2" border. Bake until meringue has form a pale golden crust, 60 min. Turn off oven but do not open the door, let cool inside oven 1 hour. Quarter strawberries and place them in a bowl. Add jam and toss to combine. Beat cream, yogurt, and powdered sugar in a bowl until stiff peaks form. Spoon cream mixture into center of meringue and top with strawberry mixture. SERVE immediately...
