[SimplifyMe] Beef (Lettuce) Wraps---w/ a Tip

 

ROAST BEEF LETTUCE WRAPS                     Makes 4 servings.

1/2 cup mint leaves
1 large carrot, cut into matchsticks
1 small seedless cucumber, halved lengthwise and thinly sliced
2 plums, thinly sliced
3/4 pound thinly sliced roast beef, torn into pieces
1 head lettuce, leaves separated
1 tbs finely grated ginger
1 large shallot or 1 small onion, finely chopped
Salt and Pepper
1 tbs honey
1/4 cup rice vinegar or red wine vinegar

In a bowl, whisk together vinegar, honey, 1/2 tsp salt and 1/4 tsp pepper, stir in shallot and ginger. Fill lettuce leaves with roast beef, plums, cucumber, carrot and mint. SERVE with vinaigrette for drizzling...A SERVING TIP---Instead of lettuce wraps, make a cold noodle salad: Place 8 oz package rice noodles in a bowl, cover them with warm water and let them soak until soft. Drain and toss with all the ingredients except the lettuce.
