FRUIT OAT COBBLER
MAKES 8 SERVINGS.
4 cups blackberries
4 cups sliced rhubarb
2 tbs quick cooking tapioca
1 tbs lemon juice
1 tbs lemon zest
3/4 cup sugar
1 cup old fashioned oats
1/4 cup flour
1/2 cup brown sugar
5 tbs butter
HEAT oven to 350 degrees. In a bowl, combine first 6 ingredients. In a separate bowl, combine oats, flour and brown sugar. Crumble in butter, mix until it resembles coarse crumbs. Pour fruit mixture into a baking dish. Top with oat mixture. Bake 1 hour or until topping is browned. Let stand 10 min. before SERVING...
