CHEESY VEGGIE PIE
MAKES 6 SERVINGS.
2 1/2 pounds tomatoes, sliced
1 piecrust
1/4 cup breadcrumbs
8 oz mozzarella cheese, sliced
1/2 cup basil leaves
1/4 cup shredded Parmesan cheese
HEAT oven to 375 degrees. Place tomatoes on paper towels. Sprinkle tomatoes with salt, let stand 10 min. Pat salted side of tomatoes with paper towels. Flip tomatoes, sprinkle with salt. Fit piecrust into a 9" pie plate. Sprinkle breadcrumbs on the bottom. PLACE half of the mozzarella over breadcrumbs, along with a third of the tomatoes and a third of the basil. Sprinkle with 2 tbs Parmesan. Layer with a third of the tomatoes, a third of the basil and remaining mozzarella. Layer with remaining tomatoes, basil and Parmesan. Season with pepper. Bake 45 min. until crust is browned. Cool 15 min. before slicing, then SERVE...
