BLACK EYED PEAS
Slice 3 green onions. Heat 2 tbs butter in a skillet, add green onion whites, 2 oz diced ham, 1 diced celery stalk, 1/2 diced green bell pepper and salt, cook 6 min. Add 2 minced garlic cloves and a pinch of cayenne, cook 1 min. Add 10 oz thawed frozen black eyed peas and 1 cup chicken broth, simmer 8 min. Stir in green onion greens, then SERVE...
