SAUCY MEATBALL SLIDERS
MAKES 16 SLIDERS.
FOR SAUCE---
2 cloves garlic, chopped
1/4 tsp red pepper flakes
1 tbs olive oil
14 oz canned crushed tomatoes
1/4 tsp salt
FOR MEATBALLS---
1/2 pound ground beef
1/2 pound ground sausage
1/4 cup chopped onion
1/8 cup minced garlic
1 tbs chopped thyme
1/2 tbs chopped parsley
1 egg
1/4 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
6 oz ricotta cheese
1 tbs salt
Olive oil
16 slider size buns, toasted
MAKE SAUCE---In a saucepan, saute garlic and pepper flakes in oil 1 min. Stir in tomatoes and salt. Bring sauce to a boil, then simmer 15 min. MAKE MEATBALLS---Heat oven to 450 degrees. In a bowl, mix beef and next 10 ingredients. Form 1 1/2" balls out of meat mixture. Heat a skillet with a bit of oil. Add meatballs, brown on all sides 4 min. Return all meatballs to skillet, place in oven to finish cooking 10 min. Toss meatballs with 3 cups sauce. Place on toasted slider buns, sprinkle with Parmesan and parsley, then SERVE...
