HONEYDEW KIWI POPSICLES
MAKES 4 SERVINGS.
1 kiwi, peeled, sliced
1 cup pureed honeydew melon
Pinch of lemon zest
3 oz box melon gelatin
In bowl, combine gelatin and 1 cup boiling water, stirring until gelatin is dissolved. Stir in pureed honeydew melon and lemon zest. Pour gelatin mixture into 4 small wax coated paper cups. Freeze 2 hours. Arrange kiwi slices on top of pops and insert popsicle sticks. Freeze popsicles an additional 4 hours or until set. Peel off paper cups. SERVE immediately...
