VEGETABLE CHEESE TORTA WITH HERBS
MAKES 6 SERVINGS.
1/4 cup grated Parmesan cheese
Grated nutmeg
4 eggs
2 cups sauteed spinach or Swiss chard
1 tbs thyme
1 tbs butter
Olive oil
Salt and Pepper
2 cups heavy cream
1 cup mozzarella cheese
2 cups mushrooms
1 shallot, chopped
12 slices French bread, each 1/4" thick
BRUSH a baking dish with oil. Line sides and bottom of dish with bread, overlapping slices. Melt butter in a skillet, saute shallot 5 min. Add thyme and mushrooms, continue sauteing until liquid has evaporated. Mix mushrooms, greens and mozzarella cheese together, spread on top of bread. IN a separate bowl, put eggs, cream, nutmeg, salt and pepper, whisk together. Pour over vegetables, sprinkle Parmesan over all. Bake at 375 degrees until puffed and golden 1 hour. Cool to warm before slicing. SERVE with a salad if desired...
