APPLE SALAD WITH NUTS
MAKES 4 SERVINGS.
2 tsp each sugar and sherry vinegar
4 oz Roquefort cheese
Pepper to taste
1 tbs walnut or vegetable oil
1 head escarole or lettuce
1/2 cup walnut pieces
1 tsp salt
1 apple, cored, quartered, sliced thinly
TEAR escarole into bite size pieces, put into a bowl. Add apple slices to greens. Drizzle with oil, toss. Sprinkle with salt, pepper and sugar, toss. Add vinegar, toss. On a baking sheet, toast walnuts 12 min. in a 350 degree oven. Sprinkle walnuts and Roquefort over salad, then SERVE...
