SIMPLE TOMATO SOUP WITH CHEESE
MAKES 8 SERVINGS.
48 oz carton low sodium chicken broth
2 garlic cloves, minced
1/4 cup butter
Grated Parmesan cheese
6 tbs flour
1/2 cup finely chopped onion
2 cans 14.5 oz each diced tomatoes with basil, oregano and garlic, undrained
IN a blender, process tomatoes with juices until pureed, set aside. In a saucepan, heat butter. Add onion, cook until tender. Add garlic, cook 1 min. longer. Remove from heat, stir in flour until smooth. Cook 1 min. Whisk in broth. Add pureed tomatoes, bring to a boil. Reduce heat, simmer 25 min. SERVE with cheese...
