CELERY ROOT & GOLDEN APPLE PUREE Makes 12 servings.
1/4 cup heavy cream
Kosher salt and black pepper
8 oz potatoes, peeled, cut into cubes
1 cup cubed fennel from 1 bulb, trimmed, cored
1/2 cup apple cider
3 golden delicious apples, peeled, cored, cut into cubes
2 pounds celery root, peeled, cut into cubes
1/2 cup unsalted butter
In skillet or stockpot, melt butter. Add fennel, celery root, potatoes, apples, 1 tsp salt and 1/2 tsp pepper. Cook until vegetables begin to soften. Add cider, cover skillet. Simmer 40 min. or until vegetables are very soft. If pan seems dry, add a little cider or water. Add cream, cook 1 min. Transfer mixture to food processor or blender, process until a coarse puree, then SERVE...
