HEIRLOOM TOMATO GRATIN Makes 10 servings. This recipe is really yummy, I used tomatoes from our garden in it and I used parsley instead of thyme and its easy to make, hope you enjoy it. 1 tbs thyme leaves 1/4 cup grated Parmesan cheese 2 cups bread crumbs Salt and Pepper 4 pounds mixed heirloom tomatoes, sliced 2 tsp honey 3 tbs orange juice 1/2 tsp grated orange zest 1 onion, chopped 2 tbs olive oil 1 clove garlic, smashed Heat oven to 425°. Rub inside of a baking dish with garlic, then coat with oil. Heat 1 tbs oil in a skillet. Add onion and cook until tender, do not let it brown. Remove from heat and stir in zest, juice and honey. -Scatter half the onion mixture in the bottom of dish. Arrange tomatoes, overlapping slightly, over the onions and season with 1/4 tsp each salt and pepper. Repeat. In a bowl, combine bread crumbs, cheese, thyme and remaining oil. Sprinkle over tomatoes and bake until golden brown and bubbling, 20 min. then SERVE... |
