SKILLET FRIED CHICKEN
MAKES 4 SERVINGS.
3 cups plus 1 tbs oil
2 tsp paprika
2 tsp garlic powder
1 1/4 cups flour
4 chicken thighs
1 tbs hot sauce
1/4 cup brown sugar or Splenda
1 egg
2 tsp baking powder
2 tsp cayenne
4 chicken drumsticks
Salt and Pepper
3 tbs Worcestershire sauce
In a saucepan, bring 4 cups water, brown sugar, Worcestershire, hot sauce, 2 tbs salt and 1 tbs pepper to a simmer, stirring until sugar dissolves. Transfer to a bowl, let cool. Add chicken, refrigerate 3 hours. Remove chicken from brine, pat dry. In a bowl, whisk flour, cayenne, garlic powder, baking powder, paprika, 2 tsp salt and 1 tsp pepper. In another bowl, whisk 1 1/2 cups water, egg and 1 tbs oil. Whisk flour mixture into liquid mixture. In a skillet, heat remaining oil. Dip each chicken piece into batter, then add to skillet.
