Heat oven to 425°. Coat jelly roll pan with cooking spray. Coarsely shred 3/4 pound zucchini. Squeeze until very dry. Heat oven to 350°. Line 24 muffin pan cups with paper liners. Trim 3/4 pound zucchini. In food processor, pulse zucchini until pureed.
