[SimplifyMe] Veal Cheese (Burgers)---with Squash

 

VEAL CHEESE BURGERS WITH SQUASH                       Makes 4 servings.

4 sesame rolls or hamburger buns, split
3/4 pound fontina cheese or Swiss cheese
1 clove garlic, peeled, grated
1 pound lean ground veal
4 tbs butter or margarine
Grated nutmeg
1/2 butternut squash or 1 acorn squash, peeled, seeded, thinly sliced into rings
Honey
A handful grated Parmesan cheese
1/2 pound lean ground beef
12 sage leaves
Salt and Pepper
Oil

Heat oven to 425°. Coat squash slices with oil, season with nutmeg, salt and pepper. Roast until tender and browned at the edges, 22 min. Melt butter until it foams. Increase heat and add sage leaves. Cook until crisp, then transfer them to paper towels, reserving brown butter. Chop sage leaves.
STEP 2---Combine veal and beef with sage and garlic, season with salt and pepper. Mix in Parmesan cheese and form patties. Heat a cast iron skillet or griddle. Add burgers and cook basting with the reserved brown butter for 4 min. Flip, top burgers with fontina cheese to melt and cook for another 4 min. Drizzle cooked squash with honey. Lightly toast buns in a warm oven. Place cheeseburgers on roll bottoms, top with squash rings and set roll tops in place, then SERVE...
