[SimplifyMe] Parmesan Broccoli---(2 Recipes)---Garlicky Escarole

 

PARMESAN BROCCOLI                              Makes 4 servings.

Toss 1 pound broccoli florets with 1 tbs oil and 1/4 tsp each salt and pepper on jelly roll pan. Roast in 450° oven 15 min. Combine 1/4 cup grated Parmesan cheese, 1/4 cup bread crumbs, 2 tsp oil and 1 tsp finely grated lemon peel. Sprinkle bread crumb mixture over broccoli, roast 5 min. or until broccoli is tender and crumbs are golden brown, then SERVE...

GARLICKY ESCAROLE                              Makes 3 1/2 cups.

Heat 1 tbs oil in a skillet. Add 2 cloves garlic, finely chopped, and 1/4 tsp crushed red pepper, cook 1 min. Add 2 heads escarole, chopped, and 1/8 tsp each salt and pepper, cook 4 min. or until wilted, tossing. Stir in 1 can cannellini beans, rinsed, drained, and 1 tbs capers, drained, chopped. Cook 2 min. SERVE as a side or on baguette slices as an appetizer...
