ONIONS AND POTATOES Makes 4 servings.
4 cups baby spinach, loosely packed
2 medium onions, thinly sliced
3 tbs olive oil
1/4 cup chopped flat leaf parsley
3 tbs butter
3 tbs balsamic vinegar
4 skinless boneless chicken breasts
Salt and Pepper
1/4 cup grated Parmesan cheese
2 pounds potatoes, cut into 1/2" cubes
Heat oven to 400°. In a pot, combine potatoes and salted water to cover. Bring to a boil and cook until tender. Drain and return potatoes to pot. Toss with 2 tbs butter, Parmesan and parsley, season with salt and pepper. Cover to keep warm.
---In a skillet, heat 2 tbs oil. Season chicken and cook until golden brown. Transfer to a baking dish, roast until cooked through, 10 min. In same skillet, heat remaining butter and oil. Stir in onions and vinegar and season with salt, cook until onions are caramelized. At the end, stir in 1/4 cup water and scrape up any browned bits. Serve chicken on a bed of spinach and top with caramelized onions. SERVE the potatoes on the side...
