CHIPOTLE CHICKEN HERB MEATBALLS Makes 4 dozen meatballs.
Combine 2 pounds ground chicken, 1/4 cup tomato paste, 4 minced garlic cloves, 1 cup finely chopped onion, 2 beaten eggs, 1/2 cup plain bread crumbs, 1 1/2 tsp kosher salt, 2 finely chopped chipotle chiles in adobo sauce plus 2 tsp adobo sauce, 1 1/2 tsp chili powder, 3 tsp ground cumin, 2 tsp ground coriander and 1/2 cup finely chopped cilantro or parsley, mix well.
