APPLE BUNDT CAKE WITH WALNUTS Makes 16 servings.
Powdered sugar
1 cup chopped walnuts
3 eggs
1/2 cup apple juice
1/4 tsp nutmeg
1 tsp cinnamon
1 3/4 cup sugar or Splenda
1 cup raisins
3 apples, peeled, cored, coarsely chopped
2 tsp vanilla
1 cup oil
3/4 tsp salt
1 tsp baking soda
3 cups flour
Heat oven to 350°. Grease and flour a bundt pan. Into a bowl, measure all ingredients except apples, walnuts, raisins and powdered sugar, beat until mixed. Increase speed, beat 2 min. Stir in apples, walnuts, and raisins. Spoon batter into pan. Bake 1 hour 15 min. or until done. Cool cake in pan 10 min. Invert cake onto wire rack, remove pan and cool completely.
