SAUCY SPAGHETTI SQUASH
MAKES 2 SERVINGS.
1/4 of a spaghetti squash
1 tbs oil
2 cloves garlic, minced
14.5 oz can diced tomatoes with basil, garlic and oregano, undrained
2 oz spaghetti
1/4 cup pimiento stuffed green olives, chopped
1/4 cup raisins
1/8 cup snipped basil
1 oz feta cheese, crumbled
Remove strings and seeds from spaghetti squash. Place cut side down in baking dish. Add 2 tbs water. Cover with vented plastic wrap. Microwave on 100% power for 12 min. or until squash pierces easily. Cool slightly. In a pan, heat oil. Add garlic, cook 1 min. Add tomatoes, bring to boiling. Boil until slightly thickened. In a pot, cook spaghetti according to package directions, drain, return to pot. Hold squash in one hand. Using a fork in other hand, scrape pulp from squash into strands. Add squash, tomato sauce, olives, raisins and basil to pasta in pot. Season to taste with pepper. SERVE topped with cheese...
