CRUNCHY BLT SALAD
MAKES 2 SERVINGS.
2 slices bacon
1/2 cup cherry tomatoes
3 tsp oil
1/4 of a bread baguette, cut into cubes
1/2 head romaine lettuce, quartered lengthwise
1/8 tps salt
1/8 tsp pepper
Heat oven to 400 degrees. In a skillet, cook bacon until crisp, drain on paper towel. Break into pieces, set aside. Line a baking pan with foil. Add tomatoes, toss with 1 tsp oil. Bake 10 min. Transfer tomatoes and their juices to a bowl. Place bread cubes and romaine on baking pan. Drizzle romaine with 1 tsp oil, tossing to coat. Return pan to oven. Bake 5 min. or until bread is golden and romaine is browned at edges. Add bread to bowl with tomatoes. Toss to combine. Let stand 5 min. Transfer tomatoes, bread, romaine and bacon to a platter. Drizzle with remaining oil. Sprinkle with salt and pepper, then SERVE...
