ONION POTATO CASSEROLE

MAKES 6 SERVINGS.

1 egg

1/8 cup matzo meal

2 tsp salt

Pepper

3 potatoes, peeled

1 onion, cut into 6 wedges

1/8 cup oil

Heat oven to 375 degrees. In a bowl, whisk eggs, matzo meal, salt and pepper. Grate potatoes and onion. Add to egg mixture, toss. In a pan, heat oil. Stir into potato mixture. Transfer to a greased baking dish. Bake 50 min. or until golden brown, then SERVE...
