[SimplifyMe] Crunchy Jalapeno {Hushpuppies}

 

CRUNCHY JALAPENO HUSHPUPPIES
MAKES 36.
 
Oil
1 1/2 cups self rising cornmeal
1 cup self rising flour
1/2 onion, chopped
6 jalapenos, seeded, diced
15 oz can creamed corn
2 eggs, beaten
Salt and Pepper
Hot sauce
 
Pour 1 1/4" of oil into a pot, heat. Heat oven to 200 degrees. Combine cornmeal, flour, onion, jalapenos, corn and eggs in a bowl, stir until blended. Let stand 5 min. Drop batter by teaspoonfuls into hot oil. Cook until golden brown.  Remove from oil, drain on paper towels. Transfer to a baking sheet, keep warm in oven, sprinkle with salt and pepper, transfer to a dish. SERVE with hot sauce...
