[SimplifyMe] Coffee-Glazed Ham Biscuit {Sandwiches}

 

COFFEE-GLAZED HAM BISCUIT SANDWICHES
MAKES 4 SERVINGS.

1 tbs each baking powder and sugar
1 cup each shredded cheddar cheese, milk and coffee
3 cups flour
1 tsp salt
3/4 tsp cream of tartar
1/3 cup butter
1/2 cup mashed cooked sweet potato
4 slices bacon
1 fully cooked ham slice, cut into 4 equal pieces
1/4 cup peach preserve
4 eggs, scrambled

Heat oven to 450 degrees. FOR SWEET POTATO BISCUITS---In a bowl, combine flour, baking powder, sugar, salt, cream of tartar, cut in butter until mixture resembles coarse crumbs. Stir in cheese. Make a well in center of flour mixture. In a bowl, combine milk and sweet potato. Add sweet potato mixture to flour mixture, stir until moistened. Turn out dough onto a floured surface. Knead 12 strokes. Roll dough to a 3/4" thick rectangle. Cut into 8 pieces. Place biscuits on a baking sheet. Bake 14 min. or until lightly browned. IN a skillet, cook bacon until crisp. Drain on paper towels, reserving 1 tbs bacon fat in skillet. Add ham to skillet, cook until browned. Add coffee to skillet with ham. Simmer until coffee begins to thicken, glaze ham. Remove ham from skillet. Split biscuits. Top bottoms with ham, preserves, eggs, bacon and biscuit tops, then SERVE...
