POTATO EGG PEPPER PORK HASH
MAKES 4 SERVINGS.
1 each poblano pepper and jalapeno pepper, seeded, chopped
1 clove garlic, minced
1 1/4 pounds ground pork
1 pound potatoes, halved
1/2 tsp salt
1/4 tsp pepper
4 eggs, cooked sunny side up in 1 tbs butter
In a bowl, combine poblano pepper, jalapeno pepper and garlic. Add pork, mix to combine. Set aside 15 min. In a pan, cook potatoes in boiling salted water until tender. Drain. In a skillet, cook pork mixture until pork begins to brown. Stir in potatoes, sprinkle with salt and pepper. Cook until pork is cooked through and potatoes are tender. SERVE eggs over hash...
