PASTA WITH SAUCE
Makes 4 servings.
3/4 cup parsley, chopped
1/8 tsp nutmeg
1/4 tsp crushed red pepper flakes
3/4 pound ground beef
1 stalk celery, finely diced
Salt and Pepper
2 tbs oil
28 oz can crushed tomatoes
1/8 tsp cinnamon
1/4 cup dry white wine or broth
2 cloves garlic, finely chopped
1 carrot, finely diced
1 onion, chopped
12 oz fettuccine pasta
COOK pasta according to package directions. Heat oil in a skillet. Add onion, season with 1/2 tsp each salt and pepper, cook covered 5 min. Add carrot, celery and garlic, cook covered until they begin to soften. Combine beef and wine in a bowl. Add beef mixture to vegetables, increase heat, cook breaking it up until liquid has evaporated and meat begins to brown. STIR in red pepper, cinnamon and nutmeg.
