VEGGIES OVER RICE
Makes 8 servings.
Hot sauce
Salt and Pepper
4 green onions, thinly sliced
6 garlic cloves, finely chopped
14 oz pkg kielbasa sausage, sliced
1 pound dried black eyed peas, soaked overnight, drained
2 cups long grain rice
1 jalapeno pepper, seeded, thinly sliced
2 ham hocks
2 onions, chopped
Oil
HEAT 2 tbs oil in a pot. Add sausage, cook until browned, transfer to a plate. Reduce heat, add onions and remaining oil, cook covered until tender. Add garlic, cook 2 min. Return sausage to pot, add peas, ham and 3 cups water, bring to a boil. Reduce heat, simmer covered until peas are tender. TWENTY FIVE minutes before peas are done, cook rice according to package directions. Transfer ham to a plate. Shred meat, discarding skin and bones. Stir meat back into pot along with green onions, jalapeno, and 1/4 tsp each salt and pepper. SERVE over rice with hot sauce...
