COCOA CAKE NO-BAKE---this was easy to make and very delicious.
Makes 8 servings.
BEAT 2 cups heavy cream, 1/2 cup each lowfat sour cream, powdered sugar, and hot cocoa mix, 1 tsp vanilla and 1/4 tsp salt in a bowl until stiff peaks form. Dab a little cream mixture on 1 chocolate wafer cookie, you will need 70 total, place it in center of a platter, the cream will keep it in place. REPEAT with 6 cookies, arranging them around and touching center cookie. Spread 1/2 cup cream mixture on top, leaving a 1/2" border around edge. Top with a layer of 7 cookies. Repeat with cream and cookies to make 10 layers of cookies total. Top with remaining cream mixture. Refrigerate 2 hours. Top with crushed chocolate cookies before SERVING...
