[SimplifyMe] Veggies with {Shells}

 

VEGGIES WITH SHELLS
Makes 4 servings.

1/2 cup parsley, chopped
1 pint grape tomatoes
Salt and Pepper
1 head cauliflower, cored, sliced
3 oz pepperoni, thinly sliced
12 oz medium shells pasta
2 tbs oil

HEAT oven to 425 degrees. On a rimmed baking sheet, toss cauliflower, oil, and 1/4 tsp each salt and pepper. Roast 12 min. Cook pasta according to package directions. Drain pasta, return it to pot. Add tomatoes to cauliflower, toss to combine. Roast 6 min. more. Scatter pepperoni over vegetables, roast until cauliflower is golden brown and tender 8 min. more. Toss pasta with cauliflower mixture and parsley, then SERVE...
