Flatbread
2 tbs olive oil
1 tbs lemon juice + wedges
4 cloves garlic, thinly sliced
12 oz jar roasted red peppers, drained and cut into 1" pieces
4 oz feta cheese, crumbled
Kosher salt and black pepper
2 tbs dry white wine or low sodium chicken broth
4 green onions, sliced
1 1/2 pounds large peeled and deveined shrimp
Heat oven to 425°. In a 2 quart baking dish, combine shrimp, peppers, green onions, garlic, wine, lemon juice and 1/4 tsp each salt and pepper. Drizzle with oil and sprinkle with cheese. Bake until shrimp are opaque throughout, 15 min. SERVE with lemon wedges and flatbread...
