SLOW COOKER PORK Makes 4 servings.
1/4 cup grated Parmesan cheese
12 oz pappardelle or other wide noodle
Kosher salt and black pepper
1/2 cup dry white wine or low sodium chicken broth
2 medium carrots, cut into 1/4" pieces
28 oz can whole tomatoes, drained
1/2 cup flat leaf parsley, chopped
2 1/2 pounds pork shoulder, trimmed and quartered
2 tsp dried oregano
1 large onion, chopped
4 cloves garlic, finely chopped
In a slow cooker, combine tomatoes, garlic, carrots, onion, wine, oregano and 1/2 tsp each salt and pepper. Add pork to slow cooker and cook covered until pork is cooked through and easily pulls apart, 8 hours on low or 5 hours on high. 20 min. before serving, cook pasta according to package directions.
