ROASTED SPINACH SQUASH
MAKES 2 SERVINGS.
1 butternut squash, cut into pieces
1 tbs plus 1/2 tsp oil
Salt and Pepper
1/4 cup sliced almonds
1/8 tsp cinnamon
Pinch cayenne pepper
2 cups spinach
Heat oven to 425 degrees. On a baking sheet, toss squash with 1 tbs oil and 1/4 tsp each salt and pepper. Roast 20 min. In a bowl, toss almonds with remaining oil, then cinnamon and cayenne. *Scatter almonds over squash, continue roasting until almonds are golden brown and squash is tender 5 min. Scatter spinach over squash and almonds, let sit 1 min. then fold together. SERVE & ENJOY...
