EASY BROCCOLI RICE-BOWL
MAKES 4 SERVINGS.
1 tbs oil
1 onion, chopped
Salt and Pepper
1 clove garlic, chopped
1 cup long grain rice
2 1/2 cups broccoli florets, chopped
Heat oil in a pan. Add onion, season with 1/2 tsp each salt and pepper until tender. Stir in garlic, cook 1 min. Add rice, stir. Add 2 cups water, bring to a boil. *Simmer 12 min. Add broccoli, continue cooking until rice is tender. Remove from heat, let stand until broccoli is tender. Fluff. SERVE & ENJOY...
