ARTICHOKE KALE SALAD
MAKES 4 SERVINGS.
2 lemons, halved crosswise
2 cups white wine or broth
2 cups water
1 bay leaf
1 thyme sprig
4 artichokes
3 tbs oil
1/2 tsp pepper
1/4 tsp salt
1/4 cup raisins
1/2 cup hot water
2 tbs lemon juice
1 tbs minced onions
1/2 tsp Dijon mustard
1/4 tsp sugar
6 cups chopped kale
1/4 cup nuts, toasted
Squeeze juice from lemon halves into a pressure cooker. Add lemon halves, wine, water, bay leaf and thyme to cooker. Cut off stem of each artichoke, peel stem. Remove bottom leaves and tough outer leaves, leaving heart and bottom. Add artichokes to pressure cooker. Close lid, bring to high pressure. Cook 10 min. *Remove from heat, release pressure. Remove lid, let stand 30 min. Remove artichokes from cooking liquid. Cut each artichoke in half lengthwise. Remove fuzzy thistle from bottom. *Heat a grill, coat with cooking spray. Combine 1 tbs oil, artichokes, 1/8 tsp each salt and pepper in a bowl. Add artichokes to grill, cook until grill marks appear. Cut each artichoke half in half lengthwise. *Combine raisins and hot water, let stand 10 min. Drain. Combine remaining pepper, salt, oil, juice and next 3 ingredients in a bowl. Add kale, toss. Place 1 cup kale mixture on each of 4 plates, top each serving with 4 artichoke pieces, 1 tbs raisins and 1 tbs nuts. SERVE & ENJOY...
