[SimplifyMe] Coconut Whoopie {Pies}

 

COCONUT WHOOPIE PIES
MAKES 14 SERVINGS.

2 1/2 cups sweetened shredded coconut
2 cups flour
2 1/2 tsp baking powder
1 tsp salt
1 3/4 sticks butter
3/4 cup sugar
1 egg plus 1 egg white
2 tsp vanilla
1 1/4 cups coconut milk
3 1/2 cups powdered sugar
3/4 cup unsweetened cocoa powder

Heat oven to 375 degrees. On a baking sheet, toast 1/2 cup coconut 7 min. In a bowl, whisk flour, baking powder and 3/4 tsp salt. In a bowl, beat 1 stick butter with sugar until fluffy. Beat in egg, egg white and 1 tsp vanilla. Beat in flour mixture and 3/4 cup coconut milk. Fold in toasted coconut. *ON 2 parchment lined baking sheets, drop 2 tbs scoops of batter. Bake until cake edges are golden 18 min. Transfer cakes. Repeat with remaining batter. Beat 3/4 stick butter, 2 cup powdered sugar, cocoa powder, 1/4 cup coconut milk, 1 tsp vanilla and 1/4 tsp salt to combine. Beat frosting until fluffy. *WHISK 1 1/2 cups powdered sugar into 1/4 cup coconut milk. Working with half the cakes, dunk rounded side of each into coconut glaze. Sprinkle with coconut. Frost flat sides of plain cakes. Top with glazed cakes. SERVE & ENJOY...
