CHUNKY TOMATO SOUP
MAKES 4 SERVINGS. CUT RECIPE IN HALF FOR 2 SERVINGS.
1 tbs oil
1/2 cup chopped onion
8 sprigs thyme
1 tsp hot paprika
1 serrano pepper, chopped
Salt and Pepper
2 cloves garlic, smashed
1 tbs plus 1 tsp tomato paste
8 tomatoes, cut into big chunks
1 quart chicken stock
1/2 cup heavy cream
In pot, combine oil, onion, thyme, paprika, serrano, salt and pepper, cook until onion is tender. Add garlic and tomato paste, cook stirring until paste turns a deep red. Add tomato chunks, bring to a simmer. Cook until tomatoes are tender and skins are peeling off. *ADD stock, bring to a boil, then simmer 10 min. Remove pot from heat, remove thyme. Using a blender, blitz soup in pot, leaving a few chunks of tomato. Return to heat, stir in cream. SERVE warm & ENJOY...
