POTATO BEAN MASH
MAKES 8 SERVINGS.
4 oz diced bacon
1 1/2 pounds potatoes, peeled, cubed
2 cloves garlic, peeled
15.5 oz can white beans, drained
2 tbs oil
2 tsp minced basil
In skillet, cook bacon until crisp, drain, set aside. In pot, bring to a boil potatoes, garlic and salted water to cover. Let simmer until potatoes are tender. Drain, reserving 1 cup potato water. Return potatoes and garlic to pot. *ADD beans, oil and 1/2 cup potato water to pot, mash until desired consistency. Stir in basil and bacon. Season with salt and pepper. SERVE & ENJOY...
