CHEESY LAMB PASTA---with mint.
MAKES 6 SERVINGS.
1 pound lean ground lamb
1 red bell pepper, chopped
3 cloves garlic, chopped
1 1/2 tsp cumin
1 1/2 tsp coriander
1 pound penne rigate pasta
3 tbs tomato paste
1 cup mint leaves, chopped
1/2 cup grated Parmesan cheese
Heat pot of salted water to boiling. Heat a skillet. Add lamb, sprinkle with 1/2 tsp salt. Cook until browned. Add bell pepper, garlic, cumin, coriander and pinch of salt, cook until beginning to soften. *Cook pasta as label directs. Reserve 1 cup cooking water, set aside. Drain pasta, return to pot. Stir in tomato paste and pasta cooking water. Cook 2 min. Stir lamb mixture, mint and cheese into pasta in pot, toss. SERVE & ENJOY...
