SPICY NOODLE SALAD---with pork, cabbage, carrots and tomatoes.
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.
8 oz rice noodles
1 tbs canola oil
1 pound lean ground pork
3/4 tsp ground red pepper
5 tbs fish sauce
2 shallots, sliced
3 cloves garlic, chopped
6 tbs lime juice
2 tbs brown sugar
2 cups shredded cabbage
2 cups shredded carrots
1/2 pint grape tomatoes, halved
1 cup cilantro, chopped
1/2 cup mint, chopped
Cook noodles as label directs. Rinse, snip noodles. Drain. In skillet, heat oil. Add pork. Sprinkle with pepper and 1 tbs fish sauce. Cook until browned. Add shallots and garlic. *Cook until tender. Remove from heat. In bowl, whisk together lime juice, sugar, remaining fish sauce, and 1 tbs water. Add noodles, pork mixture, cabbage, carrots, tomatoes, cilantro and mint, toss. SERVE & ENJOY...
