BAKED GREEK PASTA---with ground beef, sauce, tomatoes and cheese.
MAKES 10 SERVINGS.
1 tbs olive oil
1 onion, chopped
1 1/2 pounds lean ground beef
28 oz can crushed tomatoes
1 tbs red wine vinegar
1/2 tsp pumpkin pie spice
1 pound ziti pasta
1/2 cup butter
2/3 cup flour
5 cups lowfat milk
1/4 tsp nutmeg
3 eggs, beaten
1 cup grated Parmesan cheese
Heat oven to 375 degrees. Heat pot of water to boiling. Spray baking dish with cooking spray. In skillet, cook oil and onion 4 min. Add beef and 1/2 tsp each salt and pepper. Cook until browned. Add tomatoes, vinegar and pie spice. Cook 15 min. In pot, melt butter. Stir in flour until smooth. *Whisk in milk, nutmeg and 3/4 tsp salt, simmer until thickened. Cool 5 min. Stir in eggs and Parmesan. Cook pasta 2 min. less than label directs. Drain. Into baking dish, press half of pasta. Spread meat over pasta. Layer on remaining pasta. Top with sauce. Bake 45 min. or until top is browned. SERVE & ENJOY...
