PASTA WITH PUMPKIN-SAUCE
MAKES 2 SERVINGS.
4 oz fettuccine pasta
1 bacon slice, chopped
1 tbs chopped sage
1 garlic clove, minced
1/2 cup canned pumpkin puree
1/4 cup grated Parmesan cheese
1/8 tsp salt
1/8 tsp pepper
1 tbs heavy cream
1 tbs chopped parsley
Cook pasta according to package directions, omitting salt and fat. Drain in a colander over a bowl, reserving 1/2 cup cooking liquid. Heat a skillet. Add bacon, cook until almost crisp. Add 1/2 tbs sage and garlic, cook 1 min. STIR in pumpkin, cheese, salt and pepper. Add pasta, 1/4 cup cooking liquid and cream, toss. Cook until thoroughly heated. Sprinkle with remaining sage and parsley. SERVE & ENJOY...
