PORK-ROAST WITH APPLES & KALE
MAKES 4 SERVINGS.
1 tbs olive oil
1 1/2 pounds boneless pork shoulder roast
1/2 tsp salt
1/4 tsp pepper
2 1/2 cups sliced onion
1/2 cup chicken broth
1/4 cup rice vinegar
2 tsp cumin
1/2 tsp allspice
2 garlic cloves, chopped
5 cups chopped kale
1 tsp canola oil
2 large peeled apples, cut into wedges
2 tbs cider vinegar
1 tsp brown sugar
HEAT oven to 325 degrees. Heat a pot. Add 2 tsp oil to pan. Sprinkle pork with salt and pepper. Add pork to pan, cook to brown. Remove pork from pan, keep warm. Add remaining oil to pan. Add onion to pan, cook until onion begins to brown. Add broth and next 4 ingredients to pan, bring to a boil. Return pork to pan. BAKE 1 1/2 hours. Add kale to pan, bake 30 min. Heat a skillet. Add canola oil. Add apples, cook until starting to soften. Add vinegar and brown sugar, cook until sugar dissolves and liquid almost evaporates. SERVE apples with pork and kale mixture & ENJOY...
