TOMATO SAUCE PASTA
MAKES 4 SERVINGS.
1 pint cherry tomatoes
8 oz whole grain spaghetti
2 tsp unsalted butter
9 oz lean ground pork
1 tbs minced garlic
1/2 tsp salt
1/2 tsp crushed red pepper
3 anchovy fillets in oil, drained, chopped
1/4 cup dry sherry or broth
1 1/2 tbs balsamic vinegar
1/4 cup basil leaves
Heat oven to 400 degrees. Place tomatoes on a pan. Bake 12 min. or until tomatoes are lightly browned. Cook pasta according to package directions, omitting salt and fat. Melt butter in a skillet. Add pork, garlic, salt, pepper and anchovies to pan, cook until pork is browned. ADD sherry to pan, cook 30 seconds. Add tomatoes and vinegar, cook until tomatoes release their liquid and sauce is slightly thickened. Combine pasta and sauce in a bowl, toss to coat. Sprinkle with basil, then SERVE...
