MANGO RELISH & PORK CHOPS
MAKES 2 SERVINGS.
1 mango, seeded, peeled, chopped
1 cup pineapple chunks
1 orange, peeled, segmented
1/4 cup orange juice
1/4 cup chopped onion
4 pork chops
1/2 tsp chili powder
Salt and Pepper
1 tbs oil
1/2 cup orange juice
2 tsp honey
FOR MANGO RELISH---In a bowl, stir together mango, pineapple, orange, orange juice and onion, set aside. Sprinkle pork chops with chili powder, salt and pepper. In a skillet, heat oil. Add pork chops, brown on each side. IN a bowl, whisk together orange juice and honey, add to skillet. Add 1/3 cup water. Simmer until pork is done. Spoon mango relish over pork. Simmer 1 min. Remove pork and relish, keep warm. Return pan to heat. Simmer juices until reduced by half. Drizzle over pork, then SERVE...
