EASY PLUM TART
MAKES 8 SERVINGS.
1/3 cup raw almonds
1 cup flour
1/2 cup brown sugar
6 tbs unsalted butter, cut into cubes
1 egg yolk
1/4 tsp salt
2 pounds plums, pitted, sliced
1/2 tsp lemon zest
2 tbs apricot preserves
Heat oven to 400 degrees. Place almonds in a blender, process until finely ground. Add flour, 1/4 cup sugar, butter, yolk and salt, pulse until butter forms coarse crumbs. Press mixture into a 9" tart pan. Toss plums with remaining brown sugar and zest. Arrange in pan in 3 concentric circles, alternating direction of slices with each circle. Bake 40 min. until crust is lightly browned and plums are tender. In a bowl, combine preserves and 1 tbs water, brush on plums. Cool, then SERVE...
