LEMON SAUCE CHICKEN
MAKES 2 SERVINGS.
Chopped parsley
2 tbs unsalted butter
2 tbs lemon juice
1 tsp minced garlic
2 tbs oil
Salt and Pepper
Lemon slices
1/2 cup plus 1/4 cup chicken broth
Flour
2 boneless skinless chicken breasts, cut in half, pounded into cutlets
SEASON cutlets with salt and pepper, then dredge in flour. Add oil to pan, heat. Saute cutlets 3 min. on one side. Flip cutlets over, saute other side covered 2 min. Transfer cutlets to a platter, pour off fat from pan. Deglaze pan with 1/4 cup broth, add garlic. Cook until garlic is slightly brown and liquid is nearly evaporated. Add remaining broth and lemon juice. Return cutlets to pan, cook on each side 1 min. Transfer cutlets to plates. Finish sauce with butter and lemons. Once butter melts, pour sauce over cutlets. Garnish with parsley. SERVE immediately...
