TOMATO SAUCE CHICKEN
MAKES 2 SERVINGS.
1/3 cup sliced green onions
1/2 cup chopped tomato
1/2 cup chicken broth
2 tbs oil
Salt and Pepper
2 tbs heavy cream
2 tbs lemon juice
1/4 cup vodka
Flour
2 boneless skinless chicken breasts, cut in half, pounded into cutlets
Season cutlets with salt and pepper, then dredge in flour. Add oil to pan, heat. Saute cutlets on both sides. Transfer cutlets to a platter, pour off fat from pan. Deglaze pan with vodka, return to heat, cook until nearly evaporated. Add broth and lemon juice. Return cutlets to pan, cook on each side 1 min. Transfer cutlets to a plate. Stir tomato and cream into sauce. Heat through, pour over cutlets. Garnish with green onions, then SERVE...
